Spinach with Lemon and Garlic


  • 2 10-ounce bags spinach, washed and trimmed
  • 3 gloves garlic, minced
  • 1 to 11⁄2 tablespoons fresh lemon juice, or to taste
  • 1 tablespoon olive oil

Serves four people.


  1. In large skillet, heat oil.
  2. Add garlic and stir until garlic lightly browned.
  3. Add spinach in small bunches.
  4. Cook 2–3 minutes or until spinach wilts.
  5. Remove from heat.
  6. Add lemon juice and salt to taste.
