Ingredients:

  • 1 cup spinach leaves, washed and dried
  • 1⁄2 cup strawberries, sliced
  • 2 hard-boiled egg whites, chopped
  • 4 ounces chicken, cooked
  • 1⁄3 teaspoon olive oil
  • Balsamic vinegar to taste

Serves one person.

Instructions:

  1. Toss spinach, strawberries, and egg whites.
  2. Mix olive oil and balsamic vinegar and drizzle over salad.
  3. Add chicken and serve.
